Designed as a batch pre-mixed that is bursting with the tastes of the festive period, rendering it ideal for hosting a celebration. Reserve the remaining citrus syrup for morning drinks, desserts, or for more rounds of the drink.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Place the listed items in a saucepan, bring to a light boil, agitating so the sugar melts. Then, turn off the heat and leave to reach room temperature completely. Transfer to a clean bottle, seal and refrigerate it in the refrigerator, it will last for up to one month.
For the Premix: Mix the specified liquid ingredients into a large bottle, let it rest for an hour, then pass it through best through muslin, making it fully clarified.
For serving: Measure 85ml of your premix to a cocktail shaker containing ice, and stir carefully for a minute to chill. Strain to a cold coupe glass or similar, decorate with a few cranberries adding the final touch with a brief mist of mandarin oil above the glass.
